Thanks Todd!! I just followed the recipe but like I said I think the beef had a bit too much fat for lean beef. I left them out over night and then cut them to length and put in a big bowl in the fridge for the day. they seemed to dry out a bit more and even have a snap to the casings!!! They are incredible now!!!! I was a little worried at first they were kind of mushy with fat but after drying out a bit more they are GREAT|!!!!!!
edit: The new pellet burner worked awesome!! Just a perfect, steady smoke all day long. Unreal product, Thanks again for the great deal!!!!
