I went exploring the web today and found the site, Thanks so much for what I have read so far. I live in Baker City Oregon, a small rural community in Eastern Oregon. I work as a career firefighter for the local department, I serve as the training officer for the department and I cook quite a bit for the shift.

Two years ago my wife replace our aging grill with a Big Red by Charbroil. I love that grill for a gas style. I have a Weber charcoal that I never use. Last year was my first real attempt at smoking some meat. So off to the store I went and purchased a Smoke Hollow gas smoker. Just dabbled a bit last fall with jerky and different things and didn't get serious. Tried to grind some of my own sausage with my wild game and it went OK but have much to learn about that.

This summer I committed to cooking for our fire department picnic. The average attendance is about a 100 persons. I said that I would smoke some pork butts cause they were on sale in the meat department. I prepared one small 4 pound butt a week prior to the big day, and was successful with the recipe and flavor. Big day came and off came the gloves, 45 pounds of pork butts later 11 hours in the smoker, a great product emerged. Lucky i think. But the people enjoyed. lots left over and sold all that was prepared in excess. Now I look forward to learning more and advancing my experiences with cooking and preparing our food.
