so..i accidentally left a turkey breast out on the counter for about 3 hours..it had just been taken out of the fridge..after realizing it i quickly threw it in the freezer to rapidly cool..it was still cool when i picked it up..think its okay to smoke still?
 
Give it a good wash, dry it and apply your rub or brine...no need to worry, just wait 30 minutes under smoke or in the oven before sticking it with the probe thermometer...JJ

the one on the right is a butterball breast pre brined and seasoned with cajun style seasonings..

the left is brined and seasoned by myself

i have no pics of these current projects as i wasnt eating them..instead i was paid to stare at these breasts all day...

tho i do have a pic or two of the breast i did just a week earlier which was brined and seasoned the same as the breast on the left..
