Hello everyone, my name is Mike, I live in Mesa,Az.. Been doing a lot of smoking for the last ten or so years, and in the past year I've really gotten into curing and sausagemaking. Everthing from curing bacon, bresaola, guanciale and panchetta to making brats, hot dogs and summer sausage and chicken sausage. I built my own version of the ugly can smoker and also built my own curing chamber. Looking forward to getting advice and possibly giving some.. Thanks for having me. Mike
