I love Pork and I love Fried Apples so I thought why not combine them.
1 can of Fried Apple
1 cup of Apple Juice
13 pounds of Pork Shoulder Carnitas
Texas Pig Rub
Liquefy Fried Apples and Apple Juice in the blender, and injected 1 cup into the pork, used the rest in the spray bottle for misting.
In the smoker at 7PM
Looking good 8PM
10PM pork temp 155 first one off the smoker, wrap #2 till temp hit 190. The 3rd one wraped at 165 out of the smoker at 190.
1st one out of the smoke.
All were good #2 was the best follow by #3 and #1.
The flavor and texture was the same as Ham.
