Hey guys,

Spare ribs today and I take them out to start rubbing them down and guess what, I am out of brown sugar and my homemade rub.  What does a true smoker do?  Improvise!

Ribs have nice marbling.  I trimmed them up and man they look good.

Since I didn't have my normal supplies, I opened the spice cabinet and threw a bunch of stuff together and I think it will be tasty.  I gave them a good coating of honey too.  I have used honey on ribs in the past and it is really nice.  I prefer a brown sugar but honey works in a pinch, just don't be stingy with it. When using honey I like to add some black and red pepper to add some spice to the sweet.

I need to clean this baby a little bit but I refuse to ruin that delicious smokey smell.  It is not dirty it is seasoned!  I am going to set the ribs in at 200 for about 4 -6 hours.  

I will update as I go now but they will be good!
