This is my first try at Alligator sausage. I started with 6 lbs alligator meat and 3 1/2 lbs boston butt. Got it all ground up then added cajun seasoning and cure. It will go on the smoker this afternoon. These are the pics I have of the preparation. I will post more pics of the final product after smoking. If it comes out good I will be making a larger batch in a couple of weeks to bring to SELA get together.

I'm sure it will be great!  If you are not happy with it just bring the fixens and between Boykjo, Eman, ShooterRick and the rest of us we can come up with a good combination but I think you are on a good track.  I have some pork fat in the freezer we can try.  Did you put cure in it?   Just thinking if it doesn't pick up the smoke real well we can cold smoke for a couple of hours and then do a quick hot smoke at 240 or so. 

I've never made it so I am looking to learn something. 

Keep us posted, I am really interested in seeing how this works out.
 
Yes - It has a cure in it (pink salt).  I am using the same cajun seasoning that i use to make my venison sausage. I will smoke it using hickory chips and it should have an IT of 150 or so after about 5 hrs in the smoker.
 
Alright !! It came out great  Q-VIEW - wonderful flavor !!!  I wouldn't change a thing.  Was in the smoker for 5 1/2 hrs  . Took it out when the IT hit 156.
