Sirloin tip for med to med rare you'd want to go to internal of 130° - 137°.  It will be pink and juicy!

So how does this compare to a brisket? Is this more for pulling or slicing?

Slicing. It is great for roast beef.

Sliced thin, it makes great RB sammies!
