Been looking, reading, admiring and learning a ton in a very short time. Dropped a little note on one of bears many threads and he convinced me to introduce myself here. Been smoking for about 3 yrs with an offset and really enjoy it. My wife enjoys smoked meat as well as the neighbors. After reading a bunch and doing other research on the MES 40, we (my brother, wife and myself) decided to invest in one as well. So far we have cooked brisket and 4 butts on it.

Lets just say I need to adjust some ways of thinking from an offset to my first electric smoker. Did not care for the chip smoker on the mes so am working on making my own amazn. I honestly believe I will be contacting Todd as mine is not working out so well

I want to send a HUGE thank you to everyone I have learned from and looking forward to reading through the picking y'all brains for more tips and tricks.

Thanks again

Dave
