Hello all! My name is Brad, I grew up on good old back yard cook outs. My dad is a die hard charcoal man and I am too.  about 7 years ago I built an offset smoker and found that it is just a danged ole good time! In my little town we have a July 4th Freedom Celebration Rib cook off, one of my closets friends got me started on this 3 years ago and off i went! I used to only smoke a few turkeys a year at Thanksgiving and drank more than my fair share of beer during the process.  I have since figured out that there is more to this than beer and really enjoy competing against friends and local cook offs.  This weekend is the State Fair of Texas cook off (Sunday), show up with your ribs and $10, your in! i cant wait to go play! I like to cook out as much as possible and always seems to get the neighbors riled up as they are looking over my fence to see what all i am cooking and when they can get a taste... Glad to have stumbled upon your forums and hope to be a part of this with you!
