It sure can, I am gonna start working on the weep method, get a year or 2 under my belt with weeping the ribs

if you sauce on the last hour does that give it enough time to caramelize?? 
I don't know if I'd say 'caramelize', but it is a nice texture...here's what I do...

3-2-...

on the last hour I uncover, no sauce for the first fifteen minutes (if I try to sauce at this point, it just smears and cracks the bark)--at the 15 min mark I brush sauce, at the 30 min mark I brush sauce, and I remove from fire at 45 min mark with one final light brushing before serving...using Jeff's sauce, of course!*

* all times are general starting points and may be adjusted based on experience ;)
