Hello All,

I have never smoked meat or anything before. I have a new meco electric water smoker and a couple of questions.

1.. Would it be ok to use a few bbq coals next to the element to help incress the temp and use a few wood chips?

2..I have the RediCheck wireless thermometer set to help me with temp control.

3..What would be a good meat to use for a first time smoke?

I'd start with a beer can chicken. 

Their cheap & easy.

I'm not familiar with your smoker, but normally you would not want to put charcoal next to the element in an electric smoker.
 
Welcome. I would not put anything on the elements. There's going to be kick back heat

and your element will suffer early demise. I'm not familiar with your smoker so I can't give

good advice on increasing the heat.

Play around with it till you see what works and what doesn't. You'll lose some food and

some will taste great...that's smoking.
