First Competition Chicken Wings!

So I had my first informal competition wing contest yesterday for opening day of football.  It was at a local bar down the street from my house. The rules were that all cooking had to be done at the bar outside on there deck and had to be completed by the time the hawks game started (1:00).  You could marinate, rub or brine at home and you could prep your sauce at home.

I took 10 lbs of separated wings and seasoned the day before with salt pepper and garlic powder.  The morning of I loaded my mes and fryer up and dumped a bunch of lime juice in the chicken before I headed off.

Smoked in the mes at 180 for 2 hrs with double burn of hickory in the amzn.

They came out of the smoker and I flash fried them, to crisp them up before I sauced them.

Unfortunately I was a little tipsy by the time I got them sauced and I forgot to take a final pic, but I used a raspberry preserve and chipotle sauce and they turned out money.  There was one other wing that was in the running but in the end I won!  Great times and Great food for opening day.  Just wish my Seahawks had a better day.

Oh yea, the bar manager was a vegetarian so I decided to make her something spicy too.

Cream cheese, sharp cheddar and roasted red pepper poppers!

Lol... I had to look up what ABT stood for.  I'm such a newb.  For them I did a cream cheese, shredded sharp cheddar and roasted red pepper mix.  Made a T slit in the peppers and removed veins and seeds.  Stuffed them and breaded.  Super easy glass of milk to flour then rack and dry for 10 min. Then milk and bread crumbs and again rack and dry for 10.  One more time with the bread crumbs and threw them in the fridge over night.  When I was done with my wings I just threw them in the fryer for a couple minutes till they looked golden brown.  They took a little time to prep but were a huge hit.  Especially with the non meat eaters that showed up for the wing contest.
