Looks like my two boston butts will be done in the next few minutes.  Problem is my alarm goes off for work at 4:30am.  Has anybody  taken their butts from the smoker to the fridge then pulled the next day???  I'd rather not stay up until midnight to pull and only get a few hours of sleep.

I like to take the butts off and wrap with foil, and then with towels. I then place them in a ice chest and let them sit for 3 to 4 hours ( I know few guys that will let them sit for up to 7 hours) . The internal temp will continue to break down the butts. Most of the time I pull them at that point (and yes they are still hot) , but a few times they have gone to the fridge and then pulled the following day.

I guess the short answer would be... Yes, I have fridged it and pulled the next day.

If you put the butts straight into the fridge it will warm your fridge up beyond imagination, and the pork won't pull the next day...needs to be cooling down when you pull it, not cold.

Foil & towel wrap, put into 170* oven (to get the towels heated on the outside), shut it down, and get up 15-20 minutes early...pull it before you leave and toss into the fridge.

Well, I did finish it in the oven so maybe I will just throw them into the warm oven (turned off) for the night.  Not sure if I will pull them before I leave in the morning or wait until I get home.

Ahh, I see.  Guess I will pull in the morning then before I leave.  Thanks for the help guys.  Now I can at least get five hours of sleep...

Eric, I'm glad you added the part about cooling down the butt so not to heat up the fridge. I knew I had forgotten something!
