First I would like to say Hello! I've been lurking for a few days, bought a smoker a couple of weeks ago and I have already learned a lot from here.
These fatties are driving me crazy, I can't wait to try one so I'm gonna do it tomorrow. Read a lot about them and just have a couple of quick questions:
How much sausage do I need? (like to fill a gallon sized bag at the correct thickness)
When smoking do you use water in the water pan? (I'm not planning on a bacon wrap so crispy isn't important)
