Fatty Question from a Newbie

Thread Starter

First I would like to say Hello! I've been lurking for a few days, bought a smoker a couple of weeks ago and I have already learned a lot from here.

These fatties are driving me crazy, I can't wait to try one so I'm gonna do it tomorrow. Read a lot about them and just have a couple of quick questions:

How much sausage do I need? (like to fill a gallon sized bag at the correct thickness)

When smoking do you use water in the water pan? (I'm not planning on a bacon wrap so crispy isn't important)

Thanks in advance for any help!

I love this site and have become addicted to smoking!sausage.gif

The 1 lb tube of JD sausage gives you the proper thickness.

I always used water in the pan, but a few days ago I switched to sand & will never use water again.

The cleanup is easier (a piece of foil over the sand to keep grease out).

The temp seems to stay steadier with the sand.
