Greetings Smokers --

We just bought a chest freezer and our first side of beef so I thought it was time to learn how to smoke meats.  In specifying cuts, I ordered less ground beef and more of the less choice cuts than I would have if I hadn't been planning to start smoking.  I also look forward to smoking fish.  I've always preferred smoked trout with some dill sauce to other methods of preparing trout.  

I did some initial smoker shopping on Amazon and Google but did not land on my decision to go with the Master Forge double-door propane gas smoker until I found this site.  I assembled it yesterday and look forward to trying it out in coming weeks.  Don't know for sure if we'll ever take advantage of the portability option gas offers, but we do quite a bit of camping, so who knows?

Welcome, this is my first time on the site as well. If you are going to smoke fish, one method I like to use is to lay the filet (skin down) across a few slices of oranges on the grilling surface so that it won't stick and also adds a nice underlying citrus flavor.
