Well this is my first Q-View on here.  I've done about half a dozen or more smokes on my 22.5 WSM and am really starting to get the hang of it.

For labor day the choice is a 13# shoulder and 6 racks of ribs.  I'll also be throwing some corn in there at the end.

As I start this thread, I'm sitting in a nasty stall, worst I've come across yet... the temp has been stalled for HOURS.

All of my previous shoulder smokes have had a stall that has pushed lunch/dinner time back way too far, so I decided to start the smoke at 6pm yesterday.

Got started with the prep work:

The ribs are on now... I'll add more as the day continues on.

The temp has jumped 5 degrees, so hopefully we're moving again.  Can't wait!

Off to clean up the back yard before company comes

Looking great there SwordSlayer.

I had a rib smoker planned for today since I had it off but a friend called and wants be to bring my car down for a Labor Day car show.  Ma says we're doing the car show so it looks like the rib are for next weekend.

BTW- I fixed your photos for ya.  Be sure to use the 'image icon' button, click on the 'image url' tab and insert the url there and then click the 'submit' button at the bottom of the window.  That way your qview will show up and not appear as a link to the photo.

Enjoy the Smoke!

Thanks guys!

and thanks for fixing the pics Dutch... I'll do it right next time.

Well I broke through the plateau finally and the temp has jumped about 20 degrees and is well into the 180's now.  I'll foil it pretty soon for the final plunge up to 200.

I foiled 3 racks of the ribs because I want to taste the difference between 3/2/1 ribs and ribs that are just cooking the whole time.

Got my first beer cracked and am gonna start getting the corn ready pretty soon.

Nice job it looks like its going to be a hit...those stalls can kill you...makes you think something is wrong...

Nice looking smoke. We are all stuck inside down in my neck of the woods. Been raining since Friday! Luckily I have left overs :)

Here's what we ended up with

Got the corn ready:

Everything was amazing... my best smoke to date!

Boy everything looks great!

Looks like you really have your WSM dialed in!

They were both great and I've done 3/2/1 before but I really liked just straight up cooking them with no foil the whole time.  The ribs got a little more crust to them and I think they pulled pulled away from the bone much easier.

Thank you for the comments guys, everyone said the food was great and I even had some people that don't like BBQ going back for seconds.

Taking the pics was fun, its cool to see the day in pictures.

Great looking food!

The real lesson I need from you is how to get that far into the smoke without cracking the first beer??  LOL

Good luck and good smoking.

Really awesome bbq and great quality pictures.  Everything seems to be popping right off the page... then again it is lunch time.
