Just wanted to let you know how much I am enjoying this web site. I started reading it while researching smokers to buy, and found out there is also a lot of good stuff on dutch oven cooking which I also enjoy. As for smoking, I am brand new to this, although my taste buds and stomach have had quite a bit of BBQ experience over the years.
I purchased a Brink man Trailmaster LE from Home Depot and took advantage of the free shipping as the closest smoker to my home was 75 miles away. Arrived in good condition, assembly was simple, went ahead and siliconed all the bolt holes and seams and added two temp gauges to the front at grate level during assembly. Contrary to other users, everything fit perfect and I have minimal smoke leaking from the unit. Very satisfied so far. I'm still figuring out my fuel loading as I live at 7500 feet and it's nothing for the daytime temps to drop 20-25 degrees in 20 minutes when a front moves in,( which they do just about every afternoon), causing the temperature of the smoker to drop also?? Lots to learn and lots of fun learning.
Have you thought about a link to Cowboy or Chuck wagon cooking? Seems the smoking, dutch oven and cowboy cooking kinda go hand in hand. Thanks for a great site and tons of great info. Kirk
