I will post final product when finished.  cant wait.  tasted the meat before it went in the oven and it is delicious.

ok well here it is.  I took the water and drippings from my water pan and made a thin smokey strogonaff sauce, poured it over egg noodles, then piled the deliciousness on top.  My wife and I love it.  glad I did 2 chuckies instead of one.  Lunch is gonna be good tomorrow.

this will be making a regular appearance on our kitchen.  Cant get over how good it was.  The smoky stroganoff really topped it off,  the origional looked a little dry for me.  a little brain storming and I out did myself.  didnt take away from the taste of the meat or peppers, and next time I will be adding baby bellas, canned shrooms were good but not what it could have been.

How long in the smoker, at what temp, and what internal temp did you pull it out before going to the oven?

Agree that fresh shrooms would have been good, but you worked with what you had.

smoked at about 230 until IT was 165 , about 3.5 hrs., then a 350 oven for 3 hrs. covered with foil.  Yes it did have some heat to it from the cayenne an jalapenos, but it was just right, any more and it wauld have been starting to be too much.
 
yes there is sour cream in there.  I took what was in  my water pan, put it in the freezer to de-fat it,  measured it , and added powdered brown gravy mix (made it thin) added SC to taste.  came out with a nice smokey flavor.
