My FIRST Fattie w/qview!

After seeing all the fattie posts lately I thought I just had to try one out.  The wife went to four different stores trying to find a one pound chub of sausage and none of them had.

I settled for some mild italian sausage and decided to make a pizza fattie.

A little bit of pizza sauce to start.

Some pepperoni and the last of the smoked moz that I had in the fridge.  I wish I had some homemade pepperoni but I all I had was a store bought chub in the fridge.

All rolled up last night and ready for a nap in the fridge.  This will be joining a chuck roast in the smoker today for the football game tonight!!

How about makin' your own Breakfast Sausage and Italian Sausage?

I make about 30# at a time, and then you have it when you need it. 

Besides, you can make it as spicy or mild as you want.

I usually do but I only have some in casings already.  I have Chorizo and breakfast chicken sausage left but they are running low!!!  For ABT's I usually just uncase a few but for this I didn't want to use a full pound worth.  This is for a group of buddies that are coming over to watch football tonight, I don't think they will have any problems with the store bought sausage!  HAHAHAHAHAHAHAH

Here is the Chuck roast that I started with.  It was from the local farmers market and I was told no hormones and it was grain finished.  That translated to $5.99 a pound!  I just rubbed it down with a little bit of Montreal steak seasoning.

  The wife took the camera to the park with her while I had some guys over to watch football!  The Fattie turned out UNREAL!!  It was gone in minutes.  I also did a bunch of ABT's  Ten with taco meat, ten with a pork onion mix and ten with Chorizo and cheese then all of them wrapped in bacon.  The Chuckie turned out deadly but I think it would have been better with a bit more fat on it a little on the lean side so it was a bit tougher to pull. 

I guess this means I will have to do a fattie again in the next couple days to make up for not having pictures!!!!

She did come home with some pretty good pictures of my little future smoker!!
