Hello,

I'm from North Central iowa and am fairly new to smoking meat. I started out on a cheap electric smoker a couple years ago that had too thin of a wall that was difficult to get up to temperature and maintain. I did manage to smoke a few ribs with fairly good success but my smoking was pretty much limited to warm days with no wind. I have since moved up to a MES 30 a few months ago and absolutely love it!

Now that I have it and have found this forum, I am soaking up all kinds of good information as to how and what to smoke. So far, I have smoked a meatloaf, ribs, beans, ABT's and even tried a fatty (all good). I'm planning on a test run this weekend with a pork butt that will be my first pulled pork. I hope it goes well since I volunteered to do pulled pork for about 50 people in a couple weeks. With the info I've seen on this forum, I have no doubt that it will turn out well.

I never really thought much about doing any cold smokes, but I wil definitley try some smoked cheese in the near future (after I order one of the A-Maze-N Pellet Smokers to compliment my MES 30).

Thanks to everyone who contributes to this forum to help new guys like me!

Welcome aboard! I have a digital MES 30 here at home and I just bought my father in law an analog MES 30 to teach him to smoke and so I can smoke when I go to the midwest to visit. There are several MES users here at SMF.
