LJ are pressed flat to fit better in your pocket or hunting pack. Landjaeger in German means Landhunter. The purpose was being flat was to allow more room in your pocket.

Fridge?  I'm confused!  Mine cure for a few days under the press at 80 degrees...?


Fridge (cold) tightens the meat under the press so they stay the shape.
I too find this confusing as I cure mine for twelve hours at room temperature of between 68 - 75 degrees F as for being tight there has been no problem in the twenty odd years that I have been doing it - - - mind you I do this far a living which might be my problem

I have done room temp also but this time it was rather warm out like close to 90 so it went into the fridge.

Long time doing this since 1977.
