a local bar is having a rib contest in a few weeks and decided to try some different seasonings and let people taste test them for the rub i'm gonna use.  i got 2 racks of spares and cut them in half so i could try them 4 different ways. i got the ribs seasoned up on saturday and tossed them in the fridge in zip lock bags, i started my smoker up around 10:30 on sunday morning to get it up to heat and enjoyed the rest of my day.  i did the 3-2 -1 method and they all turned out great.  nice smoke ring and juicy fall off the bone ribs.   i used mesquite and apple wood for smoke flavor

top left-stubs prok marinade

top right-mesquite chipotle/ i added a lil bbq sauce during the foil process

bottom left-baby back rub

bottom right-jb fat boys/brown sugar/ habenaro powder (sweet and spicy)

i added some brown sugar to all of them when i put them on the smoker

jb fat boys/ brown sugar/habenaro powder

the stubs marinade had great flavor all the way thru, nice citrus flavor

the mesquite chipotle was good..but i like it better on chicken

the baby back rub stole the show 

and the fat boys with habenaro and brown sugar had a great bite to it...but i dont think it good enough for the competition.
