OKay I did my first smoke with my BCE. The only MODS so far is to add a grate in the fire pit thingy. And to add a much improved thermo. Anyway I smoked a whole chic.. came out great however the temp stayed close to 300 the whole time. In fact it stayed that way for close to five hours before it began to drop off. Though this worked out okayish for chicken, it wouldnt for anything else.

So I am wondering what I can do to better control the temp. I'm guessing that making a sliding cover for the hole that is on the bottom might work. Also how about a top vent, as well as better sealing the top around the sides.

Any thought would be appriciated.
 
Sounds like you started too big a fire.

Search the minnion method.

I only start with 6-8 lit briquettes & the rest unlit.
 
I started it with only 1/2 a chimminy. All lump using the meniom method. But maybe too much I do not know..... I'll give it another try or two, if it doesnt work out for me it will not be too big a loss to trash it.
 
Don't give up yet.

Experimenting is what makes this hobby fun.

Okay so I have added a sliding damper for the bottom air hole. I hope that this will help controle temp a littel better. I also ordered some fiberglass rope/oven door kit to help seal the air leak around the dome lid. Once that is installed I will make a damper for the dome lid to allow air out in a more controled maner.
