Alright guys I got a new smoker off of craigslist for $30 and I am trying it out.  I had to buy it for that money I couldn't say no.  Here it is.

I got some good lump charcoal and hickory and mesquite chunks to cook with today.  I blazed it up!

Rubbed down the ribs with my homemade rub and let them set for a while.  I also have a big chicken stuffed with lemons and herbs and rubbed down with garlic and an ozark seasoning from Penzy spices.  I nice spicy rub.

The brown sugar just melted on the ribs before I put them on.  Man these are going to be sweet!

More to come as they cook.  Also going to add some sweet potatoes, trout, scallops, and shrimp.  An awesome day!

Here is the final.  It turned a lot darker than I am used to in my electric smoker but it was fantastic.

I was stuffed needless to say.  My mother in law took the trout apart before I could get pictures but it was good as well.  

The chicken turned out really juicy and flavorful but I was concerned about how dark the skin was.  The skin tasted great too.
