My name is Jon and I live in Monterey, CA. I just purchased my first smoker, MES 30 and in the middle of my first smoke. I would like to thank everyone on this sight for all the excellent knowledge. My goal is to perfect the brisket. I am also 2 days into the e-course and sucking up as much info as my brain can handle. i will post a Q-view later. Thanks Again to All and God Bless!  -Jon

Ok! Here we go! Did the 3-2-1 method on the ribs and they turned out great! Got a little nervous on the shoulder, but things turned out good. Smoked the shoulder for 7 hours then brought it up to temp in the oven. Thanks to all for the welcomes and info.
