Did up some ribs and pork candy today along with another butt and a venison loin. I posted Qview of the loin in the "Game" section.
Used a standard pork rub on everything. 2-2-1 on the ribs. Left the pork candy on until it carmelized good. It's interesting how the rub takes on different flavor profiles on different cuts of pork. Ribs pull the heat out of the rub along with some sweet and the pork candy pulls out the sweet with a little heat. Completely different flavors, both good, but different.
Ribs turned out fantastic. Tender, juicy, flavorful, and great smoke and bite through. I was very pleased with this batch.
