Chicken Tostadas

I have been wanting to do some smoked chicken tostada's for a while now and finally got around to it yesterday. Man these were tasty

Found some boneless leg meat at the local Mexican market along with some fresh flour tortillas.

Here is the leg meat rubbed  with Chipotle powder, Onion, Garlic and Cumin

Into the smoker at 250 for 2 1/2 hours

In the meantime, I made some fresh pico de gallo and some fresh guacamole

I also fried up the flour tortillas - here they are on a rack cooling and draining

Here we are starting to build the meal with beans and the chopped chicken at the bottom

These were a big hit with Mrs Scar. She even took one for lunch

We love Mexican here, and I think that may be what I'm going to do

with some leftover thighs I smoked a couple of days ago.

Excellent, Gary!  The flour tostada has been a favorite of mine for many years.  Something magic happens when you fry a flour tortilla.
