Chicken & Sun-Dried Tomato Sausage

I haven't been hiding just so busy haven't had time to smoke anything so  I decided after doing some chicken and tri-tip yesterday i wanted fresh sausage.
Tried out a new recipe for fresh Chicken Sausage.


Chicken & Sun-Dried Tomato Sausage. I think this one is a keeper

12lb-boneless chicken thighs with out skin
24-oz onions, peeled and quartered
16-oz sun-dried tomatoes,in olive oil w/herbs
5-tbsp coriander seed
5-tbsp fennel seed
5-tbsp rosemary
5-tbsp oregano
2-tbsp celery seed
2-tbsp thyme
2-tbsp Kosher salt

Grind the chicken thighs through a 1/4inch plate
Grind the sun-dried tomatoes and onions
Mix all into a large bowl with seasonings along with the spices and salt
Let sit overnight.
Stuff into hog casings

I will cook some up. then freeze the rest for later. The kids helped with the stuffing. they were so excited that we did not burst any cases.

Looks good Robert  and they are very addicting aren't they?

We've made them too, definitely a keeper at our house, they don't last long, at first we served them on hot dog buns with a sun dried tomato-mayo sauce, then, since they went so fast, we just make patties in a burger press and freeze them, they make great chicken burgers.

I like the thighs idea better flavor for sure.

Meateater, I have been buying frozen thighs and they are working real well for sausage. Most have water added so I have not been adding water and getting good texture.

     I've made Gary's Mango Jal sausage and followed his suggestion to cut back on the onion and add more mango, I followed his recipe and added more

     mango and some mango flavoring too, when I made them I also made the sun dried tomato sausage, when it was time to make the burgers I grilled

     both, as much as we like the tomato sausage, it was the mango sausage burgers that were eaten first.  LOL
