I've been thinking about fatties all week and decided to stay up late and smoke one after I got home from work tonight. I didn't have many ingredients to choose from, but it turned out great in my opinion and tastes great too!

My pepperoni pizza fatty:

This weekend I am going to try taking some chicken breast and cut them open (I think it is called butterfly) and then pounding them thin. Then I am going to put cream cheese, green onion, and italian parsley on top the open breast and then roll it up, wrap it in bacon, and smoke it. Has anyone tried something like that before?

Good lookin fatty! Like your idea for the chicken bacon roll ups. Be worth giving it a shot and see how it goes. Bacon should keep the chicken from drying out.

That's the thing about Fatties, you can put anything in them. You may want to

add a slice or two of either muenster or Swiss cheese to your next Fattie, the

taste of just cream cheese may overwhelm depending on how much you put in.

Your pizza Fattie looks gooey delicious, nice work.

(ahem...the weave looks...ahh, who cares, it looks like it tastes great!)

Your fattie looks delicious!

Your butterflied chicken breast is a variation of chicken cordon bleu. 

It's very good with whatever you stuff the chicken with.
 
looks tasty, the chicken is going to be great I rolled up some awhile back with strips of pepperjack in them wrapped up with bacon seared them in fring pan and then on to the smoker.
