My name is Anthony and I am new to smoking. I just got a Brinkmann 810 smoker and grill and been having some fun with ribs and chicken legs so far. They have been coming out great and the wife loves it. Reading through the forum about rubbery/tough skin on chicken as I am having that issue also with my thighs, so I am gonna try some of the suggestions I have read today. I think this weekend I am going to try out some wings on the smoker, can't wait. Loving this site and forum.
