I had some Asian snack sticks and I can’t find them anymore so I figured I’d make some from memory. I started out with 3# of pork CSR’s and put them in the freezer to stiffen them up. Then I run them through the grinder, the plate had ¼” holes so whatever size that is. I then added the proper amount of cure #1 and mix well. Next the seasonings. I started out with 5 oz. of honey in my midget food processor, I then added the ingredients one at a time and tasted until I was satisfied before adding the next ingredient. After I had the perfect blend I added a little bit at a time to my pork and mix until I had the right texture. Then off to the fridge overnight to let the flavors meld and let the cure do its thing. I didn’t smoke these just dehydrated them. After I flipped them I brushed some of the mixture on one side.  Next time I’ll try to get an exact recipe, I just winged this one. Here’s a list on the ingredients in order that I added them. Enjoy!

Fish Sauce

Chinese 5 Spice

Sesame Oil

Garlic Juice

Hot Chili Oil

Smoked Paprika

Anchovy Paste (Not Pictured)

Wasabi Powder

Soy Sauce

 Fresh Cracked 3 Pepper Blend (Not Pictured)

Meateater, mornin'. They look awesome.......hows the flavor ???   Are you going to keep the recipe ???    If so..........any thoughts of sharing the amounts or are you hoggin'  it for yourself ?????

The flavor is awesome, I think I'll back off a bit on the 5 spice and make them a bit hotter next time. I'll get a recipe for ya next time I was winging this one. 


Looks great. Are they like the ones you remember?
Pretty darn close, I went from what I remembered by modified to my tastes.
