I had some Asian snack sticks and I can’t find them anymore so I figured I’d make some from memory. I started out with 3# of pork CSR’s and put them in the freezer to stiffen them up. Then I run them through the grinder, the plate had ¼” holes so whatever size that is. I then added the proper amount of cure #1 and mix well. Next the seasonings. I started out with 5 oz. of honey in my midget food processor, I then added the ingredients one at a time and tasted until I was satisfied before adding the next ingredient. After I had the perfect blend I added a little bit at a time to my pork and mix until I had the right texture. Then off to the fridge overnight to let the flavors meld and let the cure do its thing. I didn’t smoke these just dehydrated them. After I flipped them I brushed some of the mixture on one side. Next time I’ll try to get an exact recipe, I just winged this one.
