How do you like to finish your snack sticks?

Do most of you guys run cold water over your sticks to cool them down after they reach the desired IT? Then, do you let them hang out at room temp for an hour or two to bloom?
 
Last batch I made it was 40° outside and I used snow in a meat tub....Worked for me!

I did get a nice bloom, but they still had wrinkly skins.

I dont have THAT much experience to make recommendations, but with my first batch, I simply pulled them & let them cool & bloom on racks. They 'shriveled' just a bit, which I'm sure could have been mitigated a bit with a plunk into an ice bath (maybe next time). I'm ok with the 'shrivel' as thats not all that uncommon on sticks I've seen commercially made.

95% of the time i dont. The stix get a much darker color when you bloom them at room temp.
