I found 12 lbs of venison & 5 lbs of elk meat vacuum sealed in the freezer from November and decided to make snack stix and smoked sausage. I added 8 lbs of pork butt to the 17 lbs of game for a total of 25 lbs of meat. I made 8 lbs of snack stix that are on the smoker now and I will case and smoke the rest of the meat tonight. The snack stix are cracked pepper and garlic and the sausage will be cajun smoked sausage. These are views of the snack stix being made and in the smoker. I will post pics of the finished product later today.
