Ok, after getting my new MES 40", I thought I wouldn't be able to get in a smoke before Sunday, since I would be working some this weekend. Well, after seasoning it last night, I thought I would do something quick and easy to break it in....
Here she is, brand new, and ready....240 degrees, mesquite and a touch of apple chips
Rubbed up and ready.
1 hour in, 240 degrees. Beer in hand, wings through the window.
Half a tray of chips in again, settling back down with some nice TBS!
After 2 1/2 hours, about to go on the weber to crisp up the skin. Yeah, it's getting dark, but ya' gotta do what ya' gotta do sometimes.
Coming along.....aaaaaaalmost there.
