Figured I would start the post off on a good footing with a picture.

So I got my 12' smoker Thursday evening and today I am smoking some Boston butts (6 of them), 9 racks of baby back ribs, and 8 whole fryer chickens 4-5lbs each.  In addition to that I am going to be making smoked mac and cheese, smoked potatoes with bacon, and smoked corn on the cob.  

I got all the butts and chickens rubbed down yesterday by about 6pm an in the fridge.  This morning I put the ribs in Mojo marinade.  I got the Boston Butts on the smoker by 6am though I had a little temp issue in the beginning (still learning how this smoker smokes). This is also later than I had wanted but I was out late getting all the pecan wood because though I talked to three different people that were going to deliver yesterday none showed so I had to make a mad dash last night to get the word.

The boston butts have Bad Bryon's Butt Rub (salt, pepper, paprika, garlic, onion, and chipotle) and the chickens have McCormick applewood rub.  I also plan on getting some woodchuck cider today and using that for beer butt chickens.  

I am using a mix of apple juice and rum to help keep the butts moist.  I will also be using this with the potatoes as it gives their skins an awesome flavor as well as the rest of the potato.  The first time I tried it on the potatoes I almost ate the whole thing in a bite it was so good.

I am also going to be making some of what I am calling NickyB's Awesomesauces.  Punchin Peach (Peach and Chipotle BBQ Sauce), Amazin Apple (Apple and Jalapeno BBQ Sauce), and Ragin Raspberry (Raspberry and habanero BBQ Sauce).  Well now time to check the fire.

Note: I forgot to mention this but I will be serving this up to all the wife's coworkers for their dinner tonight.  Hence the title first customers.  :-D
