I did a 135 pounder a few years ago butterflied with the cavity down - he was jammed into the cooker so we couldn't flip him and he took 2nd place at the Douglas, GA, NBBQ News Best of the Best. So, I'd say go for it. Keep the heat under control.
He did come out in big sections!!
I then cooked an 85 pounder in my smaller cooker and cooked it skin side down. Wound up overcooking him a bit.
Again, sorry it took so long. I dont get on my computer that often anymore(gotta love the smartphone.....) and was having issues getting all the pics to upload through my phone. But here ya'll go....again no fancy layout, didnt put it n a platter with garnish or anything. Cooked him, rested him and served him all from the grill.....Thanks for the tips from everyone. Again I couldnt be happier for my first hog. Have enough meat for a good meal of pulled pork and just grilled up the ribs last Sat, awesome....And my cousin was thrilled because I boiled down the head so she could have the skull(she's an artist....) Cant wait for my next hog!! And am looking forward to doing many more.Enjoy!(I sure as hell did!!!!)
