smoked surprise meatballs in Italian sauce

The member  Pittman gave me an idea for meatballs

first i made meatballs from Lean meat with Parmesan cheese ,Bread crumbs   ,salt ,black pepper,fresh garlic.

blend well made small holes and filed with mozzarella  cheese ,and send to the smoker  at 250 for 2 hours .(Apple wood)

they are in a good place. so i can started with the sauce i frayed onion and garlic til soft deglazed with 1 cup of white wine

add 1 cup of water, two can tomatos, salt black pepper, oregano,time,Basil ,2 chopped Serrano   peppers .bring to boil and Cook on low heat for 3 hours

add the meatballs

Cook for another hour . leave it over night in the fridge . (warm up the meatballs)  make your favorite pasta

grind  parmesan  cheese

Hey Ahron those look great. I did some a while back using some smoked mozzarella in the center and if my memory serves me right you might just have some of that in the fridge.

Man that looks good, reminds me of my exwifes grandmothers cooking, she imigrated from Italy  , boy I miss her cooking
