Spare Ribs version 3, success thanks to SMF with QView

Well, the first two times, after 6 - 8 hours in the smoker, and having to finish up in the oven, I finally googled my smoker (Char Griller Smokin Pro), found out the mods I needed to do along with alot of great tips right here at SMF, and attempted my 3rd try at spare ribs.

First, the mods:  Vent, Charcoal box, flipping the grill charcoal pan as a baffel (by far, the coal box was my favorite.  One fill, and keeps heat for at least 4 hours.  I should have topped it off sooner, I started having a hard time getting heat the 6th hour)

I purchased the full slab of ribs, and tried trimming them St. Luis style, but my cut was off on the top side.  They still looked good, just not perfect squares.  There was LOTS of left over scraps for pulling at the end.  4 slabs is about the MAX the grillin pro can handle, and it was tight!  I need some netter rib racks, the stand up racks take up too much room with spares, i think they would be great with baby backs though.

And a platter I made to take to a cookout that afternoon:  BBQ'd, Seasoned only, a little pulled, sause, and drippings for dipping.

Once again, thanks to everyone at SMF, these were a huge hit at the cookout!  It was my neices first time having BBQ ribs, and she said it was the best food she had ever had!  lol.  kids.  Even my daughter, who doesnt like pork, said this was good.
 
Thannks All and King for the kind comments.  They say 3rd tries a charm, and it sure was for me.  Everything just came together perfect this smoke.   I just found out I have thursday / friday off this week, so I'm starting to plan something to smoke those two days :)  My family liked the pulled pork best, so I think I'ma gonna try to do a nice butt friday night for saturday.

If only I didnt have to work, and could do this full time!
