after watching a few bbq specials and the wife deciding i needed to start smoking meat.........

i did  a bunch of research on the web and especially here, i decided on the mes30. seemed like a great smoker for a beginner.

after seasoning the smoker i decided on something easy......mac-n-cheese! OMG if you havnt tried it....i highly recommend it! found the recipe on the masterbuilt web site.

for my second smoke we decided on a couple butts.......

rubbed them last night and put them on this morning, im 2 1/2 hours into the smoke.

i think i have the temp dialed in.....seems as if the temp reading on the mes is more of an average then an exact temp. have taken several temp reading @ the vent and seems to have a swing of about 10 to 15 deg. also noticed that the reading on the mes is a bit low....maybe 20 plus deg lower then my thermometer @ the vent.

the smoke seems ok......a nice steady stream of blueish smoke. i got the smoke going before i put the butts in, and have added chips once.

the one accessory i need to purchase is a good remote thermometer.....any recommendations? the one i have is a cheapo from wally world.

I don't think you are getting the best data when taking the temps at the vent. The MES is well insulated and holds heat pretty well. The temp at the vent would fluctuate a lot depending on whether the heating element is cycling on or off.

You want to know what the temp is at the cooking racks where the meat is. Enjoy that new smoker.
 
Sounds good! Just click on the insert image icon at the top of the text box & follow the prompts.
 
yeah i agree with not the most accurate @ vent , but the remote thermo i have is crap and isnt even close to being right. next best thing i have is my thermo pen. which is pretty damn accurate. so kinda winging it till i get a good remote thermo.

seems as if the mes reading has bigger swings then my reading

Looks great so far! 

The Maverick ET-732  is a great thermometer.  Get that and an A-Maze-N-Pellet-Smoker & you'll be all set for super easy smokes that you won't need to open & check on.  You'll want to, but won't need to.  ; )
 
woooohooooo....it came out great!

wrapped it when the temp. was around 170.......finished it in the oven till it was about 205....then put it in ice chest for an hour and a half.

sorry didnt take pics when i took it out of smoker or when i unwrapped it.....company showed up early.

this is what 7 people did to almost 14lbs of butt!

Looks good Duckie. I Just smoked  my first butt on the 4th and looking at your make my mouth water again. I'm doing a Brisket Saturday can wait..Good job.

mentioned to the warden (wife) that i was going to make a stand for my mes...the wife says..."why dont you just use the wire spool you brought home dumbass!"...lol works like a charm....just like she said it would...lol guess i need to bring a couple more home from work!!

did some ribs earlier this week.....turned out pretty damn good......doing a tri-tip and chicken breast today......i think i might have a new addiction!
 
That is one fine looking little smokin' buddy you have there! That pup looks just like my female English chocolate lab, Mochatoo. Is that an English chocolate? Mochatoo is a great smokin' buddy for me but I do have to dudget in time to "whack the ball" while we are smoking. LOL
