Canadian Bacon W/QVIEW! Finished

I started with a full loin:

I cut it into thirds to try a few different styles:

They were in the fridge for 8 days.  The left and center one were put in with TQ and Brown Sugar the one on the right end I used the Hi Mountain BBB cure.  This is just out of the cure and patted dry.

Next I added Coarse black pepper to the one on the left and Garlic powder to the one on the right.

This one I patted dry and then rubbed it down with Canadian Maple sryup.

Here they are after about 6 hours in the MES.

One quick little bear view.  I wrapped them all up and put them in the fridge for the night.  I will slice them up today and post some final pictures.

All sealed up and ready for the freezer!  On holidays for two weeks so packing up our trailer and heading out camping.  This stuff should be deadly over a campfire!!!  I have made Canadian Bacon a few times now and would have to say that I have found my favorite.  The best by far is the  TQ and brown sugar and then after cure rinse dry and cover with coarse black pepper!!!!!  My wifes favorite was the hi mountain cure and maple sryup before smoking.All of them taste fantastic!!!!!!!!

Heading to a campground called Asessippi Provincial Park  for four days, Then to the inlaws cabin at Falcon Lake, Manitoba for four days and then to Blue Lake Ontario for the Aug long weekend!

ABSOLUTELY FANTASTIC!!!

What a great variety of flavors

 

I did not see water in the pan, did you decide to go without?

What temp did you smoke them at and what temp were they when you pulled em off? Are they fully cooked? I have one curing in some Morton's sugar cure and I'm curious as to the temps for my smoke.

Cheers thanks for the help with it!!  We go camping every weekend, this is just my two week shut down from work.

GREAT JOB!!! Those look sooooo good. I use the maple syrup on pork a LOT.  I agree, those pieces make the best beans EVER!   bravo1.png
