Today is my birthday! The wife says, "What do you want for your birthday dinner?"

I say, "Smoked Ribs!"

After a trip to Costco and I was prepping ribs last night for today's smoke. I tried to pull the membrane off, but after many struggles, I simply decided to cut along the edge of each bone, thinking that the membrane would shrivel up to nothing during the smoke. (By the way, that was a score! It worked perfectly!!!)  

I decided to use the 3-2-1 method alone with my a-maze-n smoker, using cherry dust. I prepped the ribs with yellow mustard and my favorite rub last night and put them in the chill chest over night. Started the MES 40" at noon and by 12:30pm I was smoking with electricity! After three hours, I wrapped them in foil and cooked them for another two hours. Removing the foil, and restarted some smoke, they went in for another hour. Sooooo tasty!
 

In addition to the ribs, we grilled some asparagus and served it with crumbled bacon and crumbled feta cheese. We also did our famous hassleback potatoes.....delicious! (If anyone is interested, I will post the recipe.) Along with some red wine, it was a delicious meal!
