Second go at a brisket and ribs today 10/07/11

Had a second go at a small brisket and some ribs today and some duck legs aswell.

 

I used hickory and oak for the fuel today and managed to keep the smoker at temperature between 200 and 250 for the majority of the smoking process.

Thanks guys It's a learning process, I will try a pork butt next and maybe a go at chicken and will post the results. It's all done with the help of the people on these forums and there advice cheers!grilling_smilie.gif
