Had a second go at a small brisket and some ribs today and some duck legs aswell.

I used hickory and oak for the fuel today and managed to keep the smoker at temperature between 200 and 250 for the majority of the smoking process.

everyone enjoyed the food, here are some images!

Thanks guys It's a learning process, I will try a pork butt next and maybe a go at chicken and will post the results. It's all done with the help of the people on these forums and there advice cheers!
