I moved about 3 years ago and my new place doesn't have a nice place for the smokers, so I finally decided to rig up my Smokette in my garage. I had not used it in over 3 years and was in need of a good scrubbing, all cleaned and loaded up.

In at 10:30 PM Friday night.

Out after work on Saturday, about 1:30 temp was only 192-198

Covered with foil and a towel for about 2 hours then hand pulled.

On flour tortilla with some provolone and Cattlemans Gold.

Will take some for the guys at work Monday and Bag and freeze the rest.

Hope to start making more of the stuff I used to make all the time.

I am lucky in, there is an excellent Q place not far from me, he uses Southern Pride units, and yes I don't get the satisfaction of doing myself or imparting certain flavors I like, it is still excellent.

stuff. I have cheated and made faux Q with butts cooked slowly in roaster oven with the same seasoning and some of the dreaded liquid smoke, and while good it is far from the real thing.

I think next will be either wings or turkey thighs.
