Have a Brinkmann vertical charcoal smoker. http://www.homedepot.com/h_d1/N-5yc...splay?langId=-1&storeId=10051&catalogId=10053
Yes, I know it's a cheap one, but it got good reviews for a beginner smoker. Problem is I can't get the temperature above about 175 or 200. Can't smoke any meat at that temp. Even taking into account that the thermometer is not very accurate, it still seems to be low.
Any suggestions? Should I drill holes in the bowl that the charcoal sits in? In the bottom of the smoker? If so, how many holes?
Thanks for the help!
