I bought this 3½ lb roast and

I thought I would try something different,

So i coated the roast with sweet & sour sauce.

Then wrapped with bacon (store bought)

Smoked at 250º with RO lump and pecan till an IT of 150º

Rested for 1½ hrs, then sliced.

You couldn't taste any of the sauce but it was very juicy and tender.

Between the sauce and the bacon, It retained it's moisture really well.

The pork sirloin roast is an overlooked cut.  Please do not pass the word or the price will go up just like tri tips did.

I wish you guys would just keep this little secret to yourselves!

it's usually sold sliced for steaks but sometimes you can find one whole.  They are a delicious, tender, almost fat-free choice and are great any way you fix them.  Your's looks deliciously fantastic!
 
Thanks guys, It was better than I expected.

Like Pops said, It's very lean so I thought it would be a lot less juicy than it was.
