There are always those times where you kick yourself for not buying more of something.  Back at st. patties day sales the local Smart and Final had these huge corned beef briskets (about 9lbs a piece)  Not sure how they would be, I bought one.  Today I am kicking myself.  The brisket was lower salt than usual, pretty lean (1/4" fat cap) and came out the most tender, succulent and flavorful one I've made to date.  Going to have to ask if they can get me more of those, because this will not last long around here.

Here it is coated and ready, that pan is a 9x15

After smoking to 180/183ish

Let it rest for a couple hrs in the cooler, chilled and sliced the next day

I modified Jeff's rub a bit with Coriander and Chipotle.  Wish I had done four of em.....

Looks like you hit it.  I still have a few corned beefs in the freezer from St. Patty's sales.  Time to fire up the smoker!
