This is my second smoke, but first time for a Boston Butt. I am 11 hours into it and things seem look beautiful. However, I have two different temp readings coming out of the meat. I have 195 and in another location 185. Anyone else experienced this before? Not sure, if I should continue to 205 with the upper temp or use the lower reading. I did not foil wrap this time around, but not sure if that would make any difference in the two different temp readings. The meat seems to be awefully tender and the bark looks GREAT. This beauty will be hitting the cooler for its resting period. Thanks to all who can provide any advice. More pics to follow.

Thanks for the feedback SmokinAl. Since this was my first post in the forum my thread was held up for review so I had to act quick and make some educated decisions on what my next steps were. I knew the Butt looked and felt tender and I also knew that I was out of any danger zones (food poisning) so I ended up going with the higher temp and let it go to 203. I really think it was the right choice because the bone pulled right out after it rested in the cooler for an hour and 15.

I believe I was giddy like a school girl when I took my first bite of bark...... it was an addiction from that point forward and I had to tell myself, "now leave some for the party"

I totally enjoyed the whole experience and now can consider myself no longer a SMOKING VIRGIN.

A little button happy on my end. I kept getting an error when I submit the thread and now... I have multiples of the same. All in all, it was a good smoke. My pre-heat to 250 worked like a charm. I was anticipating the drop once the 7# R went in and I was able to recover to 227 quite easily. It was smooth sailing from there, well waking up every 3hrs wasn't that smooth, but the pay off was well worth it.

Looks good!  Bone came out real clean.  Different temps at different places are not uncommon.  Maybe a bone or some fat involved.  Maybe a different muscle.  As Al said, go by the lower temp unless the difference is unreasonable, then move probes around to figger out what is really going on.

Good luck and good smoking.
