OK, It is done and everything went really well. I only have a couple things that I will do different next time. But those are minor and taste prefferences.

Here are the Baby Back ribs that I got to smoke today. Bought them at the West Side Market in Cleveland, OH from D.W. Whitaker Meats. Had to cut them in half to get them in the smoker.

Here they are all rubbed up with Jeffs Rub. Made his BBQ Sauce last night.

Smoker all fired up and just put the Ribs in.

Used the 3-2-1 method, but modified it to 2-1/2 - 2-1/2 - 1. Now they are ready for step 2 the foil wrap.

Step 2 finished and back in the smoker for step 3 the final hour!!!

The finished product!!!!

They were GREAT!!! Very tender. Very moist. Tons of flavor from the rub and the smoke.

I know, step 4 I did not do. (package some up and send them out to you) There were not any left. 2 of us ate all of this in one sitting.
